Sesame-Crusted Tuna in Spicy Blood Orange Marmalade-Soy Glaze

Ingredients
  1. Blood Orange Soy Glaze
  2. 1 lemon Juiced
  3. 1 lime Juiced
  4. ¾ Cup Terra Verde Farms Blood Orange Marmalade
  5. ¼ Cup Seasoned rice vinegar
  6. 3 Tbs. soy sauce
  7. 1 ea Serrano or Thai Chile chopped (for less spice use ½ of the pepper)
  8. 4 sprigs of rosemary, basil, or other herb (for garnish)
  9. Tuna
  10. ¼ cup white sesame seeds
  11. ¼ cup black sesame
  12. 4 six-ounce pieces thick-cut tuna steaks
  13. kosher salt and pepper to taste
  14. 2 Tbs. peanut oil (for sautéing)
  15. Broccoli
  16. 2 Tbs. peanut oil
  17. 2 Tbs. Terra Verde Farms Peach Pear Apple Hot Sauce
  18. 1 teaspoon finely chopped garlic
  19. 1 Tbs. thinly sliced scallions
  20. 2 bunches Chinese broccoli florets only
  21. 2 Tbs. sake
  22. 2 Tbs. soy sauce
  23. pinch black pepper
  24. Crispy Sweet Potatoes
  25. 1 medium sweet potato, peeled
  26. 2 cups peanut oil (for frying)
  27. kosher salt to taste
Instructions
  1. This Recipe is adopted from one that appeared in Texas Monthly. It is sure to impress the guests at your next dinner party…..the contrast of colors makes a beautiful presentation. Assembling may be a little challenging for some, one hint is to prepare the sweet potatoes first, keep warm in a low oven.
  2. Blood Orange Soy Glaze
  3. Place all ingredients (other then herb garnish) in a blender or food processor manually pulse the until thick but not finely puréed. Set aside and keep at room temperature.
  4. Tuna
  5. Mix sesame seeds together in a shallow pan. Season the tuna with salt and pepper, dredge in the sesame seeds, pressing the seeds into the fish so they stick. In a large sauté pan or a wok heat the peanut oil until almost smoking. Sear the tuna steaks for about 30 seconds on each side; do not over cook - the center should stay rare. Remove from pan place in oven to keep warm. Wipe out any burned sesame seeds prior to cooking the broccoli.
  6. Broccoli
  7. Turn heat to high and add the peanut oil to the same pan used for cooking the tuna. When the oil is hot, stir garlic, and scallions. Add Terra Verde Farms Peach Pear Apple Hot Sauce, the broccoli and quickly toss to coat. Add the sake and the soy sauce, season with a pinch of black pepper, and cook for approximately 1 minute. Remove from heat.
  8. Crispy Sweet Potatoes
  9. In a deep saucepan heat the oil to 350 degrees. Using a vegetable peeler or mandolin, cut the yam in long, skinny strips until you are left with just the center core, which you discard. Fry the strips, stirring constantly until lightly browned, 3 or 4 minutes. Drain on a paper towel and season with salt.
  10. To serve, arrange the stir-fried broccoli in the middle of a plate. Slice each tuna steak 1/2-inch thick and arrange the slices over the broccoli. Drizzle the fish and plate attractively with the blood orange soy glaze and garnish with crispy sweet potato strips.
