  1. 2 ½ Lbs Boneless Pork (Chicken, Venison or Elk are great substitutes)
  2. 1/3 Cup Olive Oil
  3. Hot Water or Chicken Stock to Cover
  4. 2 Cloves Garlic Minced
  5. 2 Large Onions Thinly Sliced
  6. 1 ½ Tsp. Ground Cumin
  7. 1 Tbs. Oregano
  8. 2 Tsp. Kosher Salt
  9. 1 Tsp. Black Pepper
  10. 1 Jar. Terra Verde Foods - Hatch Green Chili Sauce
  11. 1 14.4 Oz can diced Tomatoes
  1. Trim excess fat from meat, cut into ½ inch cubes.
  2. Heat olive oil in heavy frying pan, sear meat on all sides
  3. Add garlic & onion and browned meat to kettle with stock or water to cover, bring to a boil, lower heat skim foam from surface. Add remaining ingredients other than Hatch Green Chili Sauce, simmer for 1 ½ hours (great in the crock pot), add Terre Verde Foods Hatch Green Chili Sauce simmer uncovered for 15-20 minutes more until the stew has thickened.
  1. Serve Stew with hot corn or flour tortillas or over polenta
