  1. 2 Lbs. Fish fillets (Snapper, Cod, Halibut or other mild white fish) or
  2. 2 whole fish (2-3 pounds each)
  3. 4 Tbs. Olive Oil
  4. 1 Large Sweet Onions, sliced
  5. 1 Cup Terra Verde Farms Green Chili Salsa
  6. ½ Cup Green Olives, sliced
  7. 2 Tbs. Capers (Optional)
  8. Kosher Salt and fresh ground black pepper
  1. Heat 3 tablespoons of the olive oil in a sauté pan, sauté onions over medium heat until translucent, stirring occasionally, pour into non-reactive baking dish large enough to hold the fish. Place fish on top of onions, drizzle with remainder of olive oil, season to taste with salt and pepper. Pour Terra Verde Farms Green Chili Salsa over fish, add olives and capers. Cover with foil or parchment and bake in moderate 350 ° oven until thickest part of fish is done (10-15 minutes). You may need additional salsa if using whole fish.
